My garden is thriving at the moment and I am harvesting every day. And because I just pulled out a nice bunch of fresh carrots I thought sharing some Foodspiration about what to do with carrots.

How do you prepare your carrots?

We too often eat things prepared in the same way, over and over again. But lack of variety makes our food boring and our lifestyle unhealthier.

So one of my favourite ways of eating carrots is burned!

Not to a crisp of course, that would be extremely unhealthy. But blow torching your blanched carrots with a kitchen torch gives them a very special and delicious smokey and caramelised flavour.

You should absolutely try it.

And my second, sometimes controversial foodspiration is carrots greens pesto.

NO, carrot green are not poisonous!.

This is just one of those many food lies where science is taken out of context to justify some food gurus’ claims!

Carrot greens contain alkaloids, which are said to be toxic, but are found in many standard household vegetables like potatoes, tomatoes and aubergine. Only in case you eat carrot greens in extremely high amounts these alkaloids can become poisonous.

But in normal consumption the benefits of the variety of nutrients by far outweigh the risks.

Carrot greens are great for your immune system, help support your body’s detoxification process, help balance your blood sugar and support the good bacteria in your intestines.

So give the carrot greens pesto a try, it really is delicious, and let me know whether you liked it.

And finally I like to share some flavour inspiration you should try when making carrots next time, no matter whether you eat them raw, blanched, cooked, roasted or burned.

Some herbs and spices that go very well with carrots are cardamon, ginger, fenugreek, dill, lemongrass, black sesame seeds, thyme, rosemary, onion seeds, cumin, cinnamon, vanilla and star anis.

Oh and just to let you know I help cancer conqueror create their new life beyond cancer taking the best care of their health without deprivation, dieting, boring meal plans and bland food. Every week I share a new Foodspiration card with my free community Re-Emerge Beyond Cancer.
